Some of the biggest excuses I hear about healthy eating, be it for health reasons, or to lose weight or gain muscle are  â âhealthy food doesnât taste good,â (which is a serious problem because if your food doesnât taste good, itâs very unlikely youâll stick to the plan) âit takes too long to prepare healthy foodâ, and, âitâs too complicated. â These excuses are usually the result of thinking you need to slave over a hot stove preparing 6 course meals all day long.  Nothing could be further from the truth.

Excuse #1 Healthy food is bland food

First off, the reality is that healthy foods arenât the one to blame; itâs the cook whoâs at fault. Â Healthy foods donât have to be boring, or taste bad. Â Foods like rice cakes taste like cardboard because thatâs what rice cakes taste like, not because all healthy foods do
Â
The belief that healthy food doesnât taste good will slow down your progress.  Healthy food is like high performance race fuel for your body, while junk food laden with salt, sugar, fats, preservatives and the like are nothing more than camouflaged candy.  You can say healthy food helps you perform like an Indy car, or a jet fighter, and junk food gives you the performance of a garbage truck! If you insist on eating junk and avoiding healthy food because âit tasteâs bad,â donât expect to win any races or competitions anytime soon.

Another point to keep in mind is the following, expensive restaurants donât serve Big Macs â notice I didnât say burgers. Â They have burgers alright; oneâs made with top quality beef, nutritious bread and piles of veggies.

A tasty menu will actually make you look forward to your meals, and thatâs critical. Â

You might be able to eat a bad meal every now or then and brush it off, but do you think you could do that every day? How about 4, 5, 6 even 7 times a day? Probably not unless you were in a POW camp and didnât have a choice. Â

Simply put, tastier food makes it easier to stick to your nutritional plan. Â Stick to your nutritional plan long enough and itâll become a lifestyle. Â By making it a lifestyle youâll reap the benefits from eating healthy only gained from âsticking to the planâ for the long haul. Â Sticking to a healthy lifestyle for the long haul means your results will stick with YOU for the long haul â and Iâd bet itâs safe to say thatâs what you want. Â Â Â Â

Excuse #2 I donât have the time to prepare healthy food

You may be saying to yourself âthatâs great but I donât have the time to cook. â The truth is neither do I, at least not 5 or 6 times a day.  However, I do have time to cook once a day and will usually prepare multiple meals at a time. Â

Once you realize that most healthy foods donât take much longer than unhealthy foods youâll find youâll have time for it too. Â

Most times itâs just as fast and even quicker. Â Usually you can take the same recipes and replace the ingredients with healthier choices. Â For example, swap medium ground beef for extra lean, butter with olive oil, brown rice for white, and presto, you have a healthy meal. Â It also helps to experiment with different types of foods and try things you are unfamiliar with.

Excuse #3 Too complicated

Itâs also not that complicated. Â You donât need to spend hours seasoning and boiling down dishes. Â The great thing is that healthy meals tend to be simple dishes that use easy to learn cooking methods.

Toni Tanner Scott, Personal Chef and Cooking Coach, writes, âTo support your healthy eating plan, stock your pantry wisely, focusing on the kinds of cuisine you and your family prefer. Start with the basics: good olive oil, reduced fat/sodium broth, brown rice, whole wheat pasta, dry beans and lentils. Use the best ingredients you can get
Use fresh ingredients when you cook itâll make your foods taste much better. Â Even the best chef in the world would be hard pressed to make a tasty meal with old, wilted and stale ingredients.

Stay away from wilted fruits and veggies, and make sure the colors are bright and/or clear. Â

While fresh organic whole foods are my first choice, using pre cut or pre mixed fruits and veggies, like a salad mix, is ok when youâre short on time. Â

As a rule of thumb, donât use anything that has a strong odor or has a cloudy color. Â
Â
Fresh fish doesnât have a strong âfishy smellâ. Â If it does, itâs more than likely going, if not already, bad. Â Same goes for other meats, stay away from strong odors.

Leftovers with a purpose
Cooking in bulk, i. e. making leftovers on purpose is a great way to keep the fridge or freezer stocked with ready to eat foods and meals.

It’s true.
You too can now enjoy the same quality meals you enjoy in your home kitchen in your campfire kitchen with little fuss.
Meals around the campfire are just as much the centre of camping life as meals around the kitchen bench at home.
It’s possible to unleash the gourmet campfire chef within you when you know how to make your campfire work for you!
For an experienced outdoorsman, the key to good outdoor cooking is both simplicity and creativity. Outdoor cooking need not employ the techniques of a high-paid chef, or even require the latest array of advanced cooking tools. It’s all about a case of good preparation, good thinking, and a whole lot of luck.
Here are some simple campfire cooking skills that will help you create mouthwatering dishes around the campfire in minutes that are not only delicious but turn out just the way they would if you were at home.
It is best to start off with a low heat fire and if the food isn’t cooking quickly enough increase coals.
Practice with a friend’s camp oven before you go out and buy one for yourself.
There are basically two kinds of fires – a trench fire or the traditional, old-fashioned above ground fire. A trench fire is a pit dug into the ground about 30 x 45 cm deep.
Look for ground that’s free from rocks as this is easier to dig. If the ground should become loose and the sides fall into the hole, place rocks around the top to support your barbeque plate and grate.
Building a below level fire will be safer for you in windy conditions.
A below level fire is also easier to cook with in bad weather conditions.
A trench helps retain the heat if you are forced to use poor quality wood.
If you use good quality dry wood in the morning you will normally wake up to hot coals under the ashes.
Remember it takes time to build good coals. Don’t expect to be able to cook a delicious feast 10 minutes after lighting your fire.
Use the cooler end of the trench fire for cooking cakes, dampers and scones.
Remember to preheat your oven over the flames and level out the ash and coals at the cooler end and place your oven down on those coals.
It’s a good idea to check the food you’re cooking every five to ten minutes and to add or remove coals in accordance with how your foods are cooking.
Lift your dutch ovens and other cooking utensils off the fire by using a thick rag and a piece of wire with a hook on one end.
Carry strike anywhere matches as well as a butane lighter and candle.
Keep matches in a plastic jar with cotton wadding on top.
Cotton balls dipped in Vaseline make great fire starters.
You should be able to hold your hands over the coals about 60 centimetres away if your oven is moderately hot. It will be hot but it should be bearable.
Your fire is ready when the flames have subsided and coals are glowing.
Cooking in the outdoors may seem hard when you’re miles away from the comforts of your own kitchen, market, or grocery store. But this is one experience that’s worth a try. So let nature bring out the best cook in you. Be prepared, be simple, be creative – whatever suits your fancy. But, don’t forget the most important part – get your family involved in the process and have as much fun outdoor cooking as you possibly can.
After all, these are among the special ingredients of a great camping cooking experience that truly lasts a lifetime.
